CARROT, APPLE SALAD

Ingredients:

  • ¼ cup raisins or crandberries (soaked for about 1 hour and drained)
  • ¼ tsp hymalian or celtic sea salt
  • ¼ cup walnuts chopped
  • 1 sweet apple (peeled, cored and shredded)
  • 1 tsp fresh parsley
  • 1 tsp Honey
  • 1 tsp lemon zest (optional)
  • 1/2 tsp chopped coriander
  • 1-2 tsp fresh mint
  • 3 tbs extra virgin olive or grape seed oil
  • 3 tbs fresh lemon juice
  • 4-5 medium size carrots shredded (for about 4 servings)

Instructions:

  1. For best results use a food processor to blend the carrots and the apple separately. Otherwise grate the carrots and apple into a bowl.
  2. Add the chopped coriander, parsley,  mint and drained raisins or crandberries to the carrots.
  3. Mix the rest of the ingredients and add to the salad mix and blended well.
  4. Cool the salad for 1 hour before serving.
