Raw Creamy Tomato Soup

This recipe serves 2


  • ¼  cup fresh basil leaves
  • ¼  cup pine nuts (soaked 4-5 hours and drained)
  • ½  tsp Himalayan or Celtic sea salt (or to taste)
  • 1 cup distilled water
  • 1 large garlic clove (peeled)
  • 1 ½ Tbsp grape seed oil or extra virgin olive oil
  • 2 celery rib (cut in small pieces)
  • 2 Medjool date (pitted and soaked in ½ cup distilled water for an hour)
  • 2 sun-dried tomato (soaked 2-3 hours and drained)
  • 5 medium tomatoes
  • 2 avocado pealed and cut in small chunks (hold off on one avocado for the topping)
  • 1 cup of grape tomato cut in halves.


  1. Place all ingredients including the water from the soaked Medjool date in a Vitamix or other powerful blender and process until creamy.
  2. Use the remaining avocado and mash half for each serving and sprinkle with grape tomatoes halves.
  3. Best served immediately.
