Pumpkin Pie – “Raw Living”

Pumpkin Pie GWTH

This  recipe tastes very much like the traditional American Pumpkin pie  dish.  Raw pumpkin and sunflower seeds are extremely high in zinc,  magnesium, essential fatty acids and B vitamins which are important for  healthy hormones, immunity and energy.   

Pumpkin is high in the  anti-oxidant beta carotene which helps to protect the brain, eyes and nervous system.  Great Thanksgiving recipe for the family.  Enjoy your pumpkin pie the healthy way!

INGREDIENTS

  • Crust
    • ¼ Cup raw sunflower seeds
    • 1 ¾ Cup raw pumpkin Seeds
    • ½ Teaspoon Himalayan sea salt 
    • 1 Cup organic pitted dates
  • Syrup
    • 1 Cup pitted dates
    • 1 ¼ cup purified water! (not tap!!!)
  • Filling
    • 4 Cups pumpkin, peeled, seeded, cut into 1-inch cubes (about 1 ½  pounds whole, before peeled)- you don’t have to get pumpkins organic
    • 2 Teaspoons ground cinnamon
    • 2 Tablespoon organic flaxseed meal (this will make the pie expand and thicken it!)- it’s a fiber people use for cleansing!

DIRECTIONS 

To make Crust, process sunflower seeds  into a fine powder (you will need a high speed blender like a “Vita Mix”  or food processor. Use will use this to “flour” the bottom of your pie  dish (use a glass or stainless steel pan)

Next, process the pumpkin seeds and  salt into a coarse meal. SLOWLY! Add in 1 cup dates to make dough (We  suggest adding in 3 or so dates at a time) Press into pie dish. Set aside in refrigerator.

To make the syrup, blend 1 cup dates with purified water until smooth. Then set aside in refrigerator.

To make the filling, process small batches of cubes pumpkin and cinnamon into a puree. Slowly add in the syrup. Process until completely smooth.  Place pumpkin filling in a bowl and hand mix in the flaxseed meal really  well.

Then pour the filling into pie crust and place in refrigerator until ready to serve. This makes 16 servings!
